Does anyone knows of any good animated movie or short done entirely (or mostly) by a single person?
Cencoroll would be a good example.
All of Don Hertzfeldt's stuff is close. He has people that help him with music, editing, and voices, but he does all the writing/animation/effects/etc himself. And all of his shorts are great: "Rejected" is a cult hit, and "Everything Will Be OK" and "The Meaning of Life" are quite powerful.
Chris Jones made "The Passenger" entirely on his own, including music.
Also, "Voices of a Distant Star." It's not quite a one-man show (his wife helped him with voices, and the short was re-dubbed professionally for wide release) but it's very nearly. And the quality is sky-high amazing for one dude.
That's what I can think of off the top of my head.
All of Bill Plympton's early work was done pretty much solo.
