There are many types of software that can be used to make such things, Borthax.
Are you aware that programs are tools, just like a pencil or paint-brush? If you are interested in making 3D art, the best place to start is not on the software. Instead, draw in a sketchbook. Learn to be an artist first - then learn new tools.

Actually, I think that some dino movies had custom programs, although I suspect these days it's all about plugins, extensions, mel scripts and clever custom addons. I can imagine Mudbox being a nice choice for organic modelling.
