Now I'm not sure if you do this based on what you're posting, but do you ever "construct" what you draw before adding on details? What I mean is, for that mouse for example, did you draw an oval and then add some depth to it, place markers for where everything rests, and then start adding detail after creating a frame?
If note, constructing things is essential if you're going for accuracy. I'd definitely suggest going from general to detailed, rather than attempt a detailed sketch immediately. The same goes for figure drawing and basically everything else too!

for your human studies you might want to try heavier brushes not just a soft brush you could use smudge brush if you like smooth work and your missing your dark values try working from mid tone to dark then dark then highlights helps alot
