Just had a quick look, but it's an interesting concept
Learn human anatomy and where it parallels with Horse anatomy.
Check out muybridge's stop motion photos of Horses in motion.Videotape a rodeo. Watch it in slo-mo. Sketch from the interesting frames. Find a nearby horse farm and bring a camera.
You tube must have some rodeos, although the resolution (like on the google video above) is gonna be kinda bad. But good for getting the motion without the details. Horse anatomy is so complex that its very easy to lose the whole picture while learning the parts.
At least Icarus tried!

Horse anatomy, cow anatomy, dog anatomy, lion anatomy, etc, from Ellenberger's animal anatomy book. It's probably going to be the most complete resource you'll find online.
